Las Gravas is a red wine from Jumilla prepared by the Finca Casa Castillo winery. It is a blend of Monastrell (70%), Syrah (15%) and Cabernet Sauvignon (15%). Once harvested, the grapes are destemmed without pressing, each variety is barrelled separately in small batches.
Manual movements are performed for about two weeks. The capacity of the tanks is 6,000 litres and the temperature is 28 degrees.
After racking, a process whereby the skins are removed, the varieties are left in new French oak barrels of 500 litres. In these, malolactic fermentation occurs.
Las Gravas is aged for between 16 and 20 months, finally varieties are assembled before bottling. Finca Casa Castillo has a long history, since the winery was built by the French as early as 1870. It was acquired by Don Jose Sanchez Cerezo in 1941. In 1991 the winery was renovated and given the name it has today.
Finca Casa Castillo is undoubtedly one of the most representative and authentic wineries in Jumilla.
