Elaboración

Vineyard (Spanish): Strains of more than 40 years. Some of the vineyards are settled on hot stony soils and partly in cooler areas, with longer vegetative cycles and slower ripening. Climate Continental, typical of the region of Toro.

Wine Making (Spanish): Hand Harvest in boxes of 15 kilograms. Alcoholic fermentation in stainless steel tanks for 12 days, with fermentation at low temperature to extract more fruity nuances alternating with peaks of higher temperatures in key moments thanks to a cold system that is used to look for greater structure. Daily bazuqueos are made. Malolactic fermentation in stainless (80%) and barrel (20%) deposits. Aging of 9 months in French and American oak barrels. Most of them are new.
