- Recolección manual de uva en cajas de 12 kilogramos. Temperatura controlada previa a la fermentación en cámaras frigoríficas especialmente diseñadas por un periodo de 24 horas (a entre 4 y 6ºC). Selección de uva en mesa. Hombros de racimo despalillado. Fermentación en tinas de roble francés de 7000 litros. Maloláctica en barrica nueva. Envejecimiento de 27 meses en barricas de roble (95% francés y 5% americano).
